This salad is terrific for lunch or a light supper, and it just takes a few minutes to put together. I always keep a jar in the fridge for fast lunches. It’s fantastic on its own, in sandwiches, and as a filling for wraps. I really enjoy serving it to big groups of people at potlucks, picnics, and even tailgating! It’s always a success!

How to Make Chicken Salad Recipe With Grapes
To make this delectable salad, you’ll need the following ingredients:
Chicken. You’ll need four cups of cooked chicken, which you may shred or chop to your desired texture. If you prefer, you can shred the chicken in your stand mixer or with an electric hand mixer. Shredding with two forks is also a good option.
You can use baked chicken that has been cooked ahead of time or create Instant Pot chicken. If you want, you can even use rotisserie chicken.
Celery. Celery, chopped, add just the right amount of crunch and freshness.
Grapes. A hint of sweetness comes from halved seedless grapes. I like to use red seedless grapes in salads because they provide a pop of color.
Cranberries dried The dried cranberries, which are sweet and tangy, are also a tasty addition.
Pecans that have been roasted. Roasted pecans, chopped, make an excellent addition. If you have a nut allergy or are serving at an event where you don’t know if anyone has a nut allergy, leave them out.
Mayonnaise or Greek yogurt are two options. In your salad, you can use all mayo, all Greek yogurt, or a little bit of both. Greek yogurt will lighten up the recipe, but it is purely a personal taste.
Seasonings. Seasonings such as salt and pepper are ideal.
Celery leaves are edible. Chopped celery leaves offer a lot of flavors, but if you don’t have any, simply leave them out.
How Long Does Chicken Salad Last?
What’s in the fridge? This meal can be kept in the fridge for up to three days. Just keep it in an airtight container. After serving, immediately refrigerate.
Is it OK if I leave it out at room temperature? I like to follow the FDA’s “two-hour rule” when it comes to food safety, which means that because this recipe contains chicken and mayonnaise, you should not leave it out at room temperature for more than two hours.
At a Picnic or a Potluck, Have You Been Left Out? If you’re serving this during a summer event where the temperature is higher, be sure to chill it as soon as possible. For their safety rule, I once again turn to the FDA. If the temperature outside is above 90 degrees, the “two-hour rule” is reduced to ONE hour.
How to Serve:
- Wrap. To make a simple wrap, stuff it and cut it in half.
- Croissant. Fill a croissant after it has been toasted.
- Lettuce Bibb. Wash and dry Bibb lettuce leave before arranging them on a plate to make lettuce cups. Then, after filling with scoops, serve.
How Much to Serve Per Person:
If you’re making this for a large gathering, such as for a party or event, you’ll want to double the recipe. This is the rule of thumb I use to determine how much food to prepare for each individual.
- 4–6 ounces per person for sandwiches and wraps
- 4–6 ounces per person in lettuce cups
- 8 ounces per person for the main course

- Cooked 4 cups, chopped chicken
- Chopped celery 1 cup
- Red seedless grapes halved 1 cup
- Dried cranberries 1/2 cup
- Roasted pecans chopped 1/2 cup
- Mayonnaise or Greek Yogurt 1 cup
- Salt 1/2 teaspoon
- Ground black pepper 1/2 teaspoon
- celery leaves chopped (optional)
Instructions
In a large mixing bowl, combine the chopped chicken, celery, grapes, dried cranberries, chopped pecans, mayonnaise, salt, and pepper. If you’re using celery leaves, toss them in as well. Toss everything together until it’s completely mixed.
